Superfood Energy Bar
Let's make a guilt-free energy bar full of superfoods. There are many ways to make energy bars, but this time we will introduce a recipe using raw cacao butter.
The key is to melt the raw cacao butter at a low temperature so as not to damage its nutritional value. This recipe is soothing from the moment you make it, with the wonderful aroma of cacao.
[Materials] 2 bars, approximately 3cm x 15cm | |
---|---|
Raw Cocoa Butter | 30g |
Raw Cacao Nibs | 10g |
Nuts (almonds, walnuts, cashews, etc., unsalted and roasted) | 20g |
Dried fruits (apricots, cranberries, blueberries, etc.) | 20g |
Quinoa | 1 tbsp |
Wolfberry | 1 teaspoon |
Pine nuts | 1 teaspoon |
Coconut sugar or beet sugar | 2 teaspoons |
Matcha | 1 teaspoon |
How to make
- Wash the quinoa and boil in water for about 10 minutes. After boiling, drain in a fine colander and set aside.
- Roughly chop larger ingredients such as walnuts, cashews, and apricots.
- Put the raw cocoa butter into a bowl and melt it in a double boiler, being careful not to let the temperature exceed 45°C.
- Add all ingredients except matcha and mix together.
- Put half of step 4 into a separate bowl and add the matcha and mix.
- Line a silicon mold or mini tray with baking paper, pour the dough from steps 4 and 5 into it, and flatten it out. If you don't have a mold or mini tray, you can make a mold out of baking paper.
- Chill in the refrigerator for about 10 minutes until hardened, then cut with a warm knife and it's done.
MEMO
- Store in the refrigerator and consume within 3 weeks.
- If you use quinoa puffs instead of quinoa, you can just mix it in without boiling it.
- Instead of matcha, you can also make this delicious cake using soybean flour or cacao powder.
- If you can't find raw cacao butter, cacao nibs, or quinoa puffs in stores, you can buy them online.
