Amaranth and radish rice
This is a season of bitter cold. We would like to introduce a recipe for rice cooked with daikon radish, a winter vegetable. It is a simple but nutritious recipe that also includes amaranth. By adding grated daikon radish, you can enjoy not only the different textures, but also the sweetness and spiciness of the cooked daikon at the same time.

Daikon radish (with leaves) | Approx. 200g |
Amaranth | 2 tablespoons |
How to make
- Wash the white rice.
- Add the amaranth to the washed rice in step 1 and rinse quickly.
- Place the washed white rice and amaranth in a rice cooker and add the specified amount of water.
- Peel the daikon radish, set aside a little for grating, and cut the rest into 1cm cubes.
- Add the sliced daikon to the rice cooker in step 3 and cook.
- Quickly boil the radish leaves in salted water and chop them.
- Add the daikon leaves (step 6) to the cooked rice and mix thoroughly.
- Serve in bowls and garnish with grated daikon radish.
