About Amazake and "Tokijiku no Mai"

The amazake used in this recipe is "Tokijiku no Mai" (sold by Tsuboguchi Agricultural Future Research Institute, Toyooka City, Hyogo Prefecture). "Tokijiku no Mai" is a koji amazake made with "Homusume Mai" rice grown using the stork farming method and "black rice". It is non-alcoholic and non-sugar, and has a refreshing natural sweetness.

Amazake - "The Dance of the Time"

The name of the "Tokijiku Dance" is said to come from "Tokijiku no Kagu no Konomi" (a fruit that grows at any time of the year and gives off a fragrant aroma), which is said to be the fruit of the present day "Tachibana". It was believed that eating it would help people live a long life without aging.

Amazake - "The Dance of the Time"

Tajimamori, who set out on a journey to find the "Hitojikōka", is enshrined as the god of sweets at Nakashima Shrine in Toyooka City, Hyogo Prefecture. Cooking is even more enjoyable when you can also enjoy the origins of the ingredients and the stories surrounding them.
